Grapefruit salad with matcha vinaigrette

This vibrant and nutritious salad combines the tanginess of grapefruit, the creaminess of avocado, and the earthy notes of matcha vinaigrette—a perfect balance of flavours and textures. A refreshing choice for any occasion!

Ingredients:

  • 1 grapefruit
  • 1/2 handful of sunflower seeds
  • 1 handful of blueberries
  • 1 avocado
  • 1/2 handful of radish sprouts
  • 2 tablespoons of extra virgin olive oil
  • 1 g of Premium Matcha from @matchaandco
  • 5 tablespoons of apple cider vinegar
  • A pinch of salt
  • 1 lime (juice)

Instructions

Peel the grapefruit and remove the bitter white pith. Peel and slice the avocado into 1 cm slices. Wash the blueberries and sprouts and set them aside.

For the vinaigrette, mix the lime juice with the matcha, olive oil, and apple cider vinegar, then whisk well.

Divide the ingredients between two plates and toss with the dressing.
