Are you a fan of quiche? 🙌 The quintessential savoury tart that you can enjoy for lunch, dinner, or even breakfast. Here, we present our recipe with a crispy base made with our favourite ingredient: matcha 💚. For the filling, we've chosen spinach and salmon, but you can fill it with whatever you like best.
Ingredients
For the crust:
3 g culinary matcha tea from
250 g wheat flour
125 g cold butter
1 pinch of salt
1 egg yolk
2 tablespoons of cold water
For the filling:
150 g smoked salmon
200 g spinach
100 g grated mozzarella cheese
1/2 tablespoon of oil
3 eggs
150 ml milk (or plant-based milk)
150 ml fresh cream (or plant-based cream)
Salt
Pepper
Instructions

To make the crust, mix the flour, culinary matcha powder, and butter, and knead. Add the egg yolk and cold water and mix.

Roll out the dough in a mould of about 15 cm in diameter.

Cut the salmon and the previously washed spinach. Preheat the oven to 180°C. Heat the oil in a pan over medium heat and lightly sauté the salmon strips and spinach. Mix the eggs, cream, milk, part of the grated cheese, salt, and pepper in a bowl. Add the sautéed salmon strips and spinach.

Pour the mixture into the mould and sprinkle the rest of the grated mozzarella on top. Bake for 30 to 40 minutes. And... voilà!
