the watermelon feta thing I keep going back to

honestly this is barely a recipe but I've made it three times this week so here we are. watermelon, feta, fresh mint, a tiny bit of red onion if you can be bothered, olive oil, black pepper. that's it. I sometimes add cucumber when I have it and it just makes everything colder and crunchier which is exactly what you want right now. the feta has to be the proper block kind not the crumbly stuff in a tub — to be fair that's the only thing I'd be particular about. the saltiness against the watermelon is just so good and it takes about four minutes to make which honestly is the main selling point at the moment. I had it for lunch two days in a row and I'm not remotely sorry about it.

aye I make this after long runs in summer, the salt from the feta actually helps
