roasted tomato and white bean thing
Made this last night basically because the tomatoes from the farmers market were on their last legs and I couldn't bear to waste them. Roasted them with a bit of olive oil and garlic until they're proper jammy — that's honestly the whole trick, just let them go until they almost collapse.
Chucked them into a pan with a tin of cannellini beans, a splash of the pasta water I had going anyway, and some wilted spinach at the end. Topped with a torn bit of sourdough to soak it up.
Roughly for two:
- 400g mixed tomatoes, halved
- 1 tin cannellini beans, drained
- 2 garlic cloves, bashed
- Big handful spinach
- Olive oil, salt, chilli flakes if you want
- Sourdough on the side
Roast tomatoes at 200°C for about 25 mins, then everything else in the pan for 10. That's genuinely it.
Nutritionally speaking, cannellini beans are doing a lot of heavy lifting here — around 9g protein and 6g fibre per 100g cooked, which is gert good for a mostly plant-based meal. Full dish comes in around 380–420 kcal depending on the bread situation.
Oli had seconds which I'm taking as a win.
