pea and mint smash — done before the kettle's boiled

Right so this came about because I had frozen peas and a bit of leftover feta and basically didn't want to think. Tuesday night, marking to get back to, couldn't be bothered with anything that needed actual cooking. You just pour boiling water over frozen peas, leave them two minutes, drain, then smash them roughly with a fork — not smooth, you want texture. Crumble in feta, a good handful of fresh mint from the garden, squeeze of lemon, drizzle of rapeseed oil, salt and pepper. That's it. Done. I had it on top of some toasted sourdough but honestly it works just scooped into a bowl on its own. My nan used to make this sort of thing with dried mint from a jar which I thought was perfectly normal until about my mid-twenties. Fresh mint is a different world tbf. The whole thing took maybe eight minutes. To be fair I wasn't even that hungry when I started and I ended up making a second portion which says a lot about how it turned out. Proper simple, proper seasonal — peas are just coming into their own right now even if I am using frozen ones.

had something similar once but used hummus as the base instead of feta, was decent but honestly feta sounds better here

mint from the garden is doing a lot of heavy lifting here, frozen peas from the freezer door is very much my speed on a Tuesday

I eat stuff like this at my desk at 2pm when I've missed lunch again, timing around training never crossed my mind tbh
