nan's rice pudding but make it green
Right so my nan used to make rice pudding every Sunday without fail. Proper old school, skin on top and everything. I've been messing about with a lighter version for ages and this week I finally landed on something I'm actually happy with.
Basically it's just pudding rice, oat milk, a tiny bit of honey and I stirred in a teaspoon of matcha right at the end off the heat. The colour is honestly a bit alarming — very green — but it tastes dead good. Floral, creamy, not too sweet. Nothing like the stodgy version I grew up with, mind you, which is maybe why I like it.
Served it warm in a little earthenware bowl with some stewed rhubarb on top because it's proper seasonal right now. The pink and green together looked quite nice actually. My husband said it looked like something from a spa menu lol — he still ate two bowls though.
