cucumber and strawberry salad sounds wrong but try it
Honestly I nearly didn't bother writing this up because it sounds a bit daft but it's become the thing I make about three times a week right now.
Basically just:
- half a cucumber, sliced thin
- a big handful of strawberries, halved
- a few mint leaves torn up
- some crumbled feta if you've got it
- drizzle of olive oil and a tiny bit of balsamic
That's it. Dead simple. Takes about four minutes if you're not being precious about it.
Lucy actually ate a whole bowl of it which is — I mean that alone is worth mentioning. Tom said it "tasted like a garden" which I think was meant as an insult but he finished it so I'm counting it as a win.
Good alongside anything really. Had it with some leftover chicken yesterday, had it on its own the day before when I couldn't be bothered cooking owt proper. It's just fresh and it does the job on a warm-ish day. Not that Leeds has had many of those mind you.
