chickpea salad I threw together in like 8 mins
Right so I had nothing in and genuinely could not be bothered but also couldn't face another sad meal deal from the shop downstairs.
Tin of chickpeas, half a cucumber, cherry tomatoes, red onion, bit of feta I had left over from god knows when. Olive oil, lemon, salt, done.
I swear down it was proper good. Like embarrassingly easy for how it tasted. Ate it straight from the bowl while reading a journal article which is basically peak student life.
What I used:
- 1 tin chickpeas, drained
- ½ cucumber, chopped
- Handful cherry tomatoes, halved
- ¼ red onion, thinly sliced
- Feta (however much, ngl I was generous)
- Olive oil + lemon juice + salt
No cooking. No faff. Deffo making this again when I can't think straight after a placement day.
