baked salmon tray thing — proper low effort

Right so I've been making this on rotation for about three weeks now and I keep meaning to write it up properly. Basically it's a sheet pan situation. Salmon fillet, whatever veg you've got knocking about — I usually do courgette, cherry tomatoes, red onion — drizzle of olive oil, bit of garlic, salt, pepper, and that's genuinely it. Oven at 200°C, about 22 minutes. Done. The thing I like about it is there's no faff with checking whether something's gluten-free because there's nothing in it that would be. Like obviously after four years I've got the checking thing down but some evenings I just want to not think about it at all. This is one of those recipes. I sometimes squeeze lemon over it at the end and that's proper lovely honestly. Or a tiny bit of tamari if I want something a bit more savoury — just double check the tamari is the GF kind, some aren't. Mind you I have burned the tomatoes before by going to mark Year 9 books and forgetting. So maybe set a timer lol. It reheats fine the next day for lunch too which is half the reason I make it. I'm not cooking twice.

I've started having salmon before evening sessions at the gym and honestly it keeps me going way better than I expected — might try doing it as a tray bake instead of just chucking it in a pan

salmon tray bakes are basically a staple at mine, courgette goes so well with it

yeah it holds up way better than most veg in the oven too, doesn't go to mush
