Vanilla Matcha Pancake - 2 servings

Ingredients * 120 g all-purpose flour * 1½ tsp Matcha & CO Vanilla Matcha Powder * 1½ tbsp sugar * 1 tsp baking powder * ¼ tsp baking soda * Pinch of salt * 1 large egg * 120 ml milk * 1 tbsp melted butter, plus extra for the pan * 1 tbsp Greek yogurt or sour cream (optional, for extra fluffy pancakes) Instructions 1. Mix the dry ingredients: In a bowl, whisk together the flour, vanilla matcha powder, sugar, baking powder, baking soda, and salt. 2. Mix the wet ingredients: In another bowl, whisk the egg, milk, and melted butter. Add the yogurt if using. 3. Combine: Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Don’t overmix—a few small lumps are perfect. 4. Rest: Let the batter sit for 5–10 minutes. This helps give you fluffier pancakes. 5. Cook: Heat a non-stick pan over medium-low heat and lightly butter it. Pour about 2–3 tbsp of batter per pancake. 6. Cook until bubbles form on the surface and the edges look set, about 1½–2 minutes. Flip and cook another 1–1½ minutes. 7. Repeat with the remaining batter.

I sometimes do a bit of miso in the batter instead of salt, weirdly works
